Why am i getting all of these yellow difficulties! first venomous spiders then goblin archers NOW 30 STONE EATERs!

First of all, you can't choose what will come for you to hunt or what will not come, it's random.
No I don't think you can kill 30 stoneeaters.
However if you think you can't do the hunt, or you don't want to do it, you can always pass it by and see what will come up next. |

Each Stoneeater has 45HP. I think it is not possible for you to beat them, even with fullarts. However, if I were you, I would just do it anyway. It's good to experience losses so you know what you can or cannot handle in the future. |
