I went to the mercenaries guild and accepted a quest. I won the battle, got my reward and 1 point to my mercenary guild experience.
But in my profile says Quest completed: 0
What do we have to do to complete a quest?

You did a mercenaries guild quest.
Mercenaries' guild: 0 (1) +49
The Quest you are referring to are the Text Quest(s).
You go to East Bay and click on Public Services to find the Inn (also linked in above post).
